Meredith's Cheesy Spaghetti Cake Bites

In the Drawn Hungry Dinner Party episode Cookshop & Stoopid Burger Compete for Gourmet Glory! Portland Cookshop owner, Meredith Mortenson, pitches a menu of snackable bites for a food festival. One of her innovative snacks was a Cheesy Spaghetti Cake Bite. This tasty morsel sounded like a fun experiment, and I had to try it for a Pitch to Plate Challenge video.


Cheesy Spaghetti Cake Bites


3 cloves garlic diced

¼ Red Onion, diced

6 Basil leaves, chopped

12 small whole basil leaves for garnish

8 oz Tomato sauce

½ package (8oz) Spaghetti Noodles

½ cup Parmesan

½ cup low moisture Mozzarella shreds

Olive Oil spray


Saute garlic, onion, and chopped basil in olive oil for 2-3 minutes till aromatic. Add in tomato sauce and stir until warmed through. 


Boil the noodles until cooked, about 9 minutes. Strain (don’t rinse) and then mix in the tomato sauce. 


Spray a muffin tin with olive oil. Use tongs to arrange noodles into the individual muffin cups. Top with a mixture of grated parmesan and mozzarella. Bake for 15 minutes at 375 degrees.


Remove from oven and let cool for 10 minutes before removing from the cups and garnishing with whole basil leaves.
