Top Chef finalist and local celebrity chef, Doug Adams, surprised the city of Portland when he announced that he would be taking over the reigns of the well-established Woodman Tavern while Adams waited for his own restaurant to finish construction. Adams infused the Northwest-inspired haunt with his signature honkytonk style. One of the dishes that found a permanent spot on the menu once Adams left, was the Fried Bologna Sandwich featuring a thick cut of housemade bologna, American cheese, sweet pickles, and a brioche bun. This after-school classic suddenly became a decadant, Instagram-worthy icon.
